Zorzal Cacao is an project of Reserva Zorzal -- a 1,019-acre private bird sanctuary and 130-acre cacao farm in the northern mountains of the Dominican Republic. Reserva Zorzal keeps 70% of this land in its wild state in order to reduce climate change. It has joined with 13 other landowners in a carbon-offset project, and is a model for the integration of conservation and sustainable agroforestry development. Zorzal is the Spanish word for “thrush” and refers to the Bicknell’s Thrush that can be found on the reserve, an endangered songbird that migrates from the Northeast United States and Canada. The cacao grown on the cultivated portion of the land is fermented on the estate and certified organic.
